Lima Beans!

February is a cold month of the year! It is also a month of renovations for Goly's Villa, mainly because there are not many bookings at this time of year. So we prefer to move and deal with everything that needs to be done.

At the same time we live in the house, (don't forget it is our main house, and we treasure it). The last few days as I said, the weather is very cold but our stove is the best way to have a warm and comfortable environment at home. Air conditioning systems, although present in the house, are not needed. 

Today we also cooked at our stove! Lima beans as you already read in the title of this article! Well those weren't from our garden, the carrots, spring onions, fresh fennel were, and we grow a lot in our garden, lima beans not yet!

Ready for the recipe?

500gr Dry Lima Beans  (put in a bowl of water from the night before)
4 Tomatoes  (I've been keeping them in batches in the freezer since the summer)
4 Spring Onions (These managed to grow in the garden over the last two "unexpectedly" warm months)
5-6 Carrots (these grow in the garden all year round)
a bunch of Fresh Fennel Leaves (maratho)
a water-glass fresh oil (also from our olive trees) 
Salt and Pepper as you prefer.

Preparation:

Boil the lima beans in 3 liters. water till they are almost ready. (Be careful not to salt them or they will lose their skin)
Cut the carrots, onions, melt the tomatoes and chop the fennel leaves
Put the boiled beans (with their water) and everything else in a large pan and put them in the oven for half an hour at 250 degrees Celsius.
