When Summer is on our doorstep!

It is a blessing to go to such a peaceful place! As winter is gone, nature grows and gives the best it can! Today we have the blessing to try some of our garden apricots! Of course, you can have the same experience and most importantly here, in the same place. All you have to do is decide when and contact us! In the meantime we give you a recipe to make apricot jam for some of your best breakfasts at home!

 

        ---Ingredients ---                                                   
  • 1.200 g apricots, ripe
  • 30 g water
  • lemon zest, of 1 lemon
  • lemon juice, of 1 lemon
  • 400 g granulated sugar
  • 1 vanilla pod
        ---To serve---
  • slices bread
  • butter
  • thyme
-----TIP-----
Keep in sterile jars in the refrigerator for at least 1 month.

------Method------
  • Cut the apricots in half and remove seeds.
  • In a pot, place the apricots, water, lemon zest and lemon juice. Place over medium heat until the mixture comes to a boil.
  • Lower heat, cover with the lid and simmer for 5-10 minutes until reduced.
  • When the apricots are soft, remove lid and add the sugar.
  • Cut the vanilla bean lengthwise and remove its seeds using a knife.
  • Add the seeds to pot with the vanilla bean and mix with a wooden spoon.
  • Simmer for 1 hour until the apricots are soft and the juices are reduced. Mix often until the apricots break up and you have a jam-like texture.
  • Remove pot from heat and allow the jam to cool. Serve the jam cold or spread it over bread slices with butter and sprinlke with thyme.
